Freezing ice cream also gives the flavours more time to blend and mature: plus, it's a good opportunity to swirl some caramel or chocolate through the mixture for a homemade ripple ice cream!
The Cuisinart ice cream makers ICE-20 and ICE-30BC have a very simple design – a frozen bowl which rotates around a stationary paddle. This design ensures the ice cream mixture is constantly pressed into contact with the frozen wall, freezing and aerating the mixture at the same time.
It may seem disappointing to lose the “instant” factor of homemade ice cream [link widoczny dla zalogowanych], but a more solid result is obtained by making the ice cream a few hours ahead of time and chilling it in the freezer. The ice cream maker will freeze and aerate the mixture to a consistency similar to soft serve – delicious, but sloppy and quick to melt. By packing the mixture into an ice cream container and freezing it solid, it will scoop and behave more like store-bought ice cream. The trick of making ice cream is to let the temperature of the bowl freeze the ingredients before the temperature of the room melts the bowl. Keeping the machine running with a half-melted bowl will not firm the ice cream up any further: eventually, it will melt back into a soupy mess. A simple way to determine if the bowl is properly frozen is to shake it: if the bowl makes a sloshing or slushing sound, it is not sufficiently frozen. Best results are obtained by freezing the bowl in the coldest part of a freezer (usually the bottom). While the Cuisinart models are very popular commercial ice cream makers, a number of cooks have noticed that their ice creams, frozen yoghurts and sorbets do not freeze completely. These tips will help to ensure properly frozen desserts.
Alcohol has a very low freezing point, and can prevent the ice cream firming up at all if added along with the other ingredients. Freeze the ice cream first and add the alcohol right at the end, using the ice cream maker just to mix it in. Large quantities of vanilla essence may have the same effect, as vanilla essence is alcohol-based.

Most people keep cream and eggs in the fridge in any case. Try not to leave the ingredients out of the fridge before making the ice cream. For sorbets which require sugar syrups made over heat, it is especially important that the syrup be completely cooled before using. To quickly chill syrup, place the saucepan in a sink full of cold water and ice, or cool until lukewarm and pop in the freezer for half an hour.
